Another reason we love the KitchenAid Stand Mixer? You can add on attachments that do magical things like shred cheese, spiralize veggies, weigh + sift flour, and even juice fruit! But it’s this pasta attachment that really makes our heart go pitter-patter…

How to Make Pasta at Home with Your KitchenAid Stand Mixer

This is the pasta recipe I use. It’s easy and tastes SO GOOD!! Promise!!

Ingredients

• 1 1/2 cups semolina pasta flour )
• 1 1/2 cups all purpose flour
• 4 eggs room temperature (slightly beat them before adding to the mixture)
• 4 tablespoons Water
• 4 tablespoons Olive Oil
• 1 teaspoon salt

Instructions

Combine semolina, flour, beaten eggs, water, oil, and salt. Mix to make a stiff dough and knead 10 minutes by hand. If the dough still feels too sticky, sprinkle on additional semolina until it comes together. If dough is too dry, sprinkle water until you get the right consistency. You’ll want to knead until the dough is elastic. The dough is ready when you put it in a ball and then press your knuckles into the dough. If the dough starts to bounce back up, it’s ready!

Wrap dough in plastic wrap or in a covered bowl and let rest for at least 30 minutes. (this is a great time to enjoy some apps + a glass of wine!)

Once dough is ready, you’ll want to lightly flour a cutting board. Take a small handful of pasta and use a rolling pin to roll it out. If you are making spaghetti noodles, I found that longer sheets of pasta work best for the attachment.

Once you have your pasta sheet, time to put through the attachment! This is the fun part!! You want to put your mixer at speed 7, then send it through! It’s that easy!! Repeat with the rest of your pasta. This recipe makes enough pasta for 4. After you take the pasta through the attachment, you can rest it on a cookie sheet and be sure to dredge it with flour so it doesn’t stick together.

To cook, bring a large pot of heavily-salted water to a boil. Add pasta and cook until tender (approximately 3 – 5 minutes). Yep! It cooks very fast!! And be sure to read later in the post where I share my favorite way to prepare fresh pasta at home – and I promise, it’s SO easy and only takes an additional 5-10 minutes!!

My favorite way to prepare fresh pasta is with this easy Cacio e Pepe recipe!!

Ingredients

• your fresh pasta from the above recipe
• 4 tablespoons salted butter
• 1 1/2 teaspoons freshly cracked black pepper
• 1 cup freshly grated parmesan cheese
• 1/2 cup fresh grated pecorino cheese
• fresh basil for serving

Instructions

Once you have all your pasta through the attachment and your noodles are ready, boil a large pot of salted water, add the pasta and cook for 3-5 minutes (yep, fresh pasta cooks fast!)

Reserve a cup of the pasta cooking water and drain. Heat the butter in a skillet with pepper, add in the pasta water and the pasta. Sprinkle all that cheese in, and toss it all good! Remove from heat, add a handful of basil, and divide the pasta between plates. Finish with a bit more parmesan cheese and enjoy with a glass of your favorite wine!
