GWS: Where is your favorite location on property for a wedding ceremony and why?
Belmond Hotel Caruso spells romance everywhere you turn. Throughout the grounds, there’s nowhere better than its lush gardens to hold the ceremony, under cloudless skies, with the sea as a backdrop. Ideally, the perfect event starts with a symbolic ceremony in the hotel’s ‘Olive Gardens’: a symphony of olive trees and white roses that seem just to be there waiting for the next couple to whisper loudly: “yes, I do”.
GWS: Is there one area of the hotel, a feature or a service that guests cannot stop raving about when they visit and experience it for the first time?
Few views are as stage-set for romance as the view on the bay that you can get from the hotel’s infinity pool: ” a true gift that keeps on giving.” One afternoon, while I was chatting with a couple I received a really challenging request. The man wanted to surprise his girlfriend, he was looking for something extraordinary. Something to remember! The hotel infinity pool with its breathtaking view of the sea, the mountains and the sky was ticking all the boxes for the creation of the memorable event, but something else, something never seen before was needed. The idea came all of a sudden: “What if we create a platform floating on the water of the infinity pool?” It sounded perfect. After 10 hours the platform was ready, thanks to our team of true professionals who rose to the challenge, the couple were delighted and they had a private romantic dinner as the stars came out.
GWS: What is your must have dish at a restaurant on property?
Belmond Hotel Caruso’s Executive Chef Mimmo is a true artist. His dishes are pieces of art and they are always “food for eyes”. Starting from his interpretations of traditional recipes like the “Linguine alla Colatura di Alice” to the fabulously cooked fresh seafood and catch of the day: it’s really hard to choose a preferred one. Our couples usually pick inspired by my mood of the day and of the people they’re inviting to their special day.
GWS: What is your favorite drink on property and where is your favorite place to enjoy it?
The Caruso Spritz! A fruity mix of local Limocello liqueur, Campari and Aperol to sip at our Loggiato Bar. The best time to go there is when the sun is about to disappear and the landscape becomes light pink. In the background, the warm voice of the Hotel resident pianist will do the rest!

GWS: How do you make a visit special for a couple on their honeymoon?
To us the more romantic and secluded the better. A single table in a secret garden corner, a just-for-two sunrise boat ride with Champagne toast, a culinary experience with a private cooking lesson, open-air couple massages, a serenade under the Amalfi moonlight: these are our secret ingredients to rev up our guest’s love factor. Are there any local festivals or events that you recommend guests attend when they visit?
GWS: What is one local destination, store or restaurant you recommend our readers experience during their stay to give them a true sense of the local culture?
Usually we suggest to ‘go local’. In Ravello, there are a lot of great restaurants, usually family-run which offer an international excellent service with a really friendly and authentic allure.
