Last week I shared the first part of our Carribbean vacation with our stay at The Viceroy in Anguilla. Today I’m sharing the second part of our stay in St. Barth’s! I think the mix of these two islands give couples a bit of everything – a relaxing stay on Anguilla at The Viceroy and then a bit more adventure + activities on St. Barth’s! If you’re interested in both islands, I’d recommend starting on Anguilla so you have a few days to totally relax after all of the excitement surrounding your wedding. St. Barth’s is an easy plane ride or boat ride from Anguilla. We took a boat ride and it was about 45 minutes to St. Barth’s. Once there you are greeted by a beautiful town on the beach that reminded me of the South of France. The language, cuisine + culture of St. Barth’s is distinctly French.

Once we arrived on St. Barth’s, we were greeted by a car from the Hotel Le Toiny and driven to the property. Hotel Le Toiny is pretty isolated on the other side of the island. From the harbor it was about a 25 minute ride. Once there, you enter a dreamy paradise. Secluded villas for each of the guests with their own plunge pools and great views of the ocean from almost everywhere. I also took advantage of their spa and got a pretty amazing facial.

St. Barth's


For our first night on St. Barth’s, we were hosted to a 3 course wine pairing dinner at Victoria’s Restaurant in Hotel Carl Gustaf. The hotel is in town atop the hill (so great views).  This was my favorite meal of the trip. Everything was so delicious. Amuse-bouche of smoked potato espuma, appetizer of ceviche of Mahi-Mahi, main course of veal loin with green pea puree and carrot espuma and dessert of Nespresso with salty caramel. Totally getting hungry again! I would highly recommend dinner here one night during your stay with the chef’s tasting menu – you won’t be disappointed!

The next day Katie chartered a boat for us. One of Jason’s favorite things to do is to be out of the water, so he was pretty excited about this. We went snorkeling and some of us cliff jumped – not me, I’m terrified of heights but Jason had a blast! So fun to spend the day out on a boat.

St. Barth's Gouverneur Beach


There are lots of beaches on the island. We checked out Gouverneur Beach first, which was nice and private – perfect for swimming and a picnic lunch. After some swimming, reading and possibly napping :) on the private beach, we went to Nikki Beach.  Nikki Beach is closer to town along with a restaurant on the beach and a much more social setting if you’re looking to go out.

Hotel Le Toiny sent us off with a picnic lunch. As you can see above, it wasn’t your typical picnic lunch! Thai chicken salad, lamb skewers, shimp quiches, hummus and more. Perfect after a long swim!

Eden Rock Hotel


That night we went for cocktails and appetizers at On The Rocks at Hotel Eden Rock. Pretty amazing views (the photo below I took on our flight out, you can see it jets right out into the ocean). We loved the views from the Hotel (along with the sushi) and this hotel would be perfect for a couple who want to stay right in town. There is lots to walk to from here and the beach (Nikki Beach) next door is super popular. After our drinks + apps, we went in town (Gustavia) to Le Select – a small bar in the middle of town that was the inspiration for the Jimmy Buffet song “Cheeseburger in Paradise” where Jason had a yep – cheeseburger in paradise! I was too full from sushi for a burger. The cheeseburger was really nothing to get excited about (I think Jimmy Buffet may have had a lot of drinks when he wrote the song!), but it was a fun spot to get a drink + some food with it’s lively outdoor patio and a must see for any Jimmy Buffet fans. :)

Our last night we decided to have dinner at Restaurant Le Gaiac at Toiny. We had heard great things about their truffle pasta and wanted to try it for ourselves. It was delicious and they make it right by your table – yes, that is a huge block of parmesan cheese! I also tried some of the local lobster which was also very yummy. Nice way to end our last night in paradise. {photos from dinner thanks to Scott Clark}
